2024 Blaufränkisch
The scents of blueberry, raspberry and black tea are present with floral undertones. The palate has a structured elegance that is bright and soft at the same time. Raspberry, plum, and subtle spice note on the finish. Serve this with a veggie lasagna, braised short ribs or a mushroom risotto.
Winemaking
Twenty-five percent of the grapes were left whole cluster on the bottom of two bins with the rest, whole berries, de-stemmed on top. Fermented in Welch bins, punched down a couple times a day. Then they were pressed off after 12 days to tank, settled and barreled down to 4 neutral oak barrels. Inoculated with ml bacteria and left to do their thing until January when they were sulfured. The barrels were left to rest for 9 months until sterile filtering and bottling. Vegan friendly.
